Herb-Infused Roast Chicken with Aromatic Spice Blend
Ingredients
- 1 Whole Chicken (about 4 lbs)
- 2 tbsp Olive Oil
- 1 tbsp Allspice
- 1 tbsp Dried Basil
- 2 Bay Leaves
- 2 stalks Celery, chopped
- 2 tbsp Fresh Chives, chopped
- 1 tsp Ground Cinnamon
- 1/4 tsp Ground Clove
- 1 tbsp Ground Coriander
- 2 tbsp Fresh Dill, chopped
- 6 cloves Garlic, minced
- 1 tbsp Fresh Ginger, grated
- 1 tbsp Dried Marjoram
- 2 tbsp Dijon Mustard
- 1/2 tsp Ground Nutmeg
- 1 Large Onion, quartered
- 1 tbsp Dried Oregano
- 1 tbsp Paprika
- 1/4 cup Fresh Parsley, chopped
- 1 tsp Black Pepper
- 1 tsp Dried Rosemary
- Pinch of Saffron threads
- 1 tsp Dried Sage
- 1 tbsp Fresh Tarragon, chopped
- 1 tsp Dried Thyme
- Salt to taste
Instructions
1. Preheat Oven: Preheat your oven to 375°F (190°C).
2. Prepare Spice Rub: In a small bowl, combine allspice, basil, ground cinnamon, ground clove, ground coriander, marjoram, oregano, paprika, black pepper, rosemary, sage, and thyme. Add a pinch of saffron and mix well. Set aside.
3. Prep Chicken: Pat the whole chicken dry with paper towels. Season the inside with salt.
4. Stuff Chicken: Fill the cavity of the chicken with onion quarters and chopped celery.
5. Rub Chicken: Rub the outside of the chicken with olive oil. Generously coat the chicken with the spice rub, ensuring an even layer.
6. Herb Infusion: In a separate bowl, mix together chopped chives, dill, garlic, ginger, parsley, and tarragon. Gently lift the skin of the chicken and stuff this mixture underneath, spreading it evenly.
7. Roasting: Place the chicken on a roasting rack in a baking dish. Roast in the preheated oven for about 1 hour and 30 minutes (PT1H30M), or until the internal temperature reaches 165°F (74°C) at the thickest part of the chicken.
8. Rest: Once cooked, remove the chicken from the oven and let it rest for 10 minutes (PT10M) before carving.
9. Serve: Carve the chicken and serve with your choice of sides. Drizzle with the pan juices for additional flavor.
