Herb-Infused Roasted Turkey with Citrus-Butter Glaze



Ingredients



- 1 whole turkey (12-14 lbs)
- 1 tablespoon kosher salt
- 1 tablespoon baking powder
- 2 tablespoons dry spices (such as paprika and black pepper)
- 1/2 cup chopped fresh herbs (such as rosemary, thyme, and parsley)
- 4 cloves minced garlic
- Zest of 2 lemons
- Zest of 1 orange
- 1 cup unsalted butter, softened

Instructions



1. Preheat the Oven
Preheat your oven to 325°F (165°C).

2. Prepare the Turkey
Remove the turkey giblets and pat the turkey dry with paper towels.

3. Season the Turkey
In a small bowl, combine the kosher salt, baking powder, and dry spices. Rub the mixture evenly over the entire surface of the turkey, including under the skin where possible.

4. Create the Herb-Infused Citrus Butter
In another bowl, mix the softened unsalted butter with the chopped herbs, minced garlic, and citrus zests until well combined.

5. Apply the Citrus-Butter Glaze
Carefully loosen the skin of the turkey breast. Rub half of the citrus-butter mixture under the skin and the remaining half all over the turkey's exterior.

6. Prepare for Roasting
Place the turkey on a roasting rack in a large roasting pan. Tuck the wing tips under the bird and tie the legs together with kitchen twine.

7. Roast the Turkey
Transfer the turkey to the preheated oven. Roast for approximately 2 1/2 to 3 hours, or until a meat thermometer inserted into the thickest part of the thigh reads 165°F (74°C).

8. Baste for Flavor
During the last hour of roasting, baste the turkey every 30 minutes with the pan drippings.

9. Rest the Turkey
Once cooked, remove the turkey from the oven and tent it loosely with aluminum foil. Let it rest for at least 20 minutes before carving.
