Herb-Roasted Chicken with Lemon and Garlic
Ingredients
- 1 whole chicken (about 4-5 pounds)
- 1 tablespoon olive oil
- 3 tablespoons butter, softened
- 1 lemon, thinly sliced
- 1 head of garlic, halved horizontally
- 2 teaspoons salt
- 1 teaspoon ground black pepper
- 1 tablespoon dried oregano
- 1 tablespoon dried thyme
- 1 tablespoon dried rosemary
- 1 cup chicken broth
Instructions
1. Preheat the Oven
Preheat your oven to 375°F (190°C).
2. Prepare the Chicken
Remove the giblets from the chicken cavity if present. Pat the chicken dry with paper towels.
3. Season the Chicken
Lightly coat the chicken with olive oil. In a small bowl, mix the softened butter with salt, pepper, oregano, thyme, and rosemary. Gently lift the skin of the chicken breast and spread half of the butter mixture under it. Use the remaining butter to coat the outside of the chicken.
4. Stuff the Chicken
Fill the chicken cavity with lemon slices and halved garlic.
5. Roast the Chicken
Place the chicken in a roasting pan. Pour the chicken broth into the pan. Roast in the preheated oven for about 1 hour and 20 minutes (PT1H20M), or until the internal temperature reaches 165°F (75°C) and the juices run clear.
6. Baste the Chicken
Halfway through cooking, baste the chicken with the pan juices to keep it moist. Repeat every 20 minutes.
7. Rest the Chicken
Remove the chicken from the oven and let it rest for 10 minutes (PT10M) before carving.
8. Serve
Carve the chicken and serve with pan juices drizzled over the top. Garnish with any remaining lemon slices if desired.
