Herbaceous Butter Glazed Fingerling Potatoes



Ingredients



- 1.5 pounds fingerling potatoes
- 4 tablespoons unsalted butter
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 2 tablespoons fresh dill, finely chopped

Instructions



1. Prepare the Potatoes
Wash and scrub 1.5 pounds of fingerling potatoes thoroughly. Pat them dry with a kitchen towel. Leave the skins on for extra flavor and texture.

2. Parboil the Potatoes
Place the potatoes in a large saucepan. Add enough water to cover them by about an inch. Add 1/2 teaspoon of salt to the water. Bring to a boil over medium heat and then reduce to a simmer. Cook for 10 minutes, or until potatoes are just tender when pierced with a fork. Avoid overcooking.

3. Drain and Cool
Drain the potatoes in a colander and let them sit for about 5 minutes until they are cool enough to handle. This slight cooling outside allows the skins to slightly crisp when sautéed.

4. Sauté the Potatoes
In a large skillet, melt 4 tablespoons of unsalted butter over medium heat. Add the parboiled potatoes in a single layer. Cook for 10-15 minutes, turning occasionally, until the potatoes are golden brown on all sides.

5. Season the Potatoes
Once golden, season the potatoes with the remaining 1/2 teaspoon salt and 1/2 teaspoon freshly ground black pepper. Stir to ensure the seasoning is evenly distributed.

6. Add Fresh Dill
Sprinkle 2 tablespoons of finely chopped fresh dill over the potatoes. Gently toss to coat the potatoes with the dill and butter mixture. Cook for an additional 2 minutes to let the flavors meld together.

7. Serve
Remove from heat and transfer to a serving platter. For visual appeal, garnish with a sprig of dill before serving.
