Instructions
1. Prepare the Cheese Spread:
In a medium bowl, combine the herbed goat cheese and softened cream cheese. Mix until smooth and well combined.
2. Slice the Cucumber:
Use a sharp knife or mandoline to slice the cucumber into thin rounds. Arrange the slices on a paper towel, sprinkle evenly with salt, and let the cucumber sit for about 5 minutes to release excess moisture. Pat dry with another paper towel.
3. Assemble the Sandwiches:
Spread a generous layer of the cheese mixture onto one side of each bread slice.
4. Layer the Cucumber:
On half of the bread slices, arrange the cucumber slices evenly over the cheese spread.
5. Complete the Sandwiches:
Top the cucumber-covered bread slices with the remaining slices, cheese side down, creating a sandwich.
6. Trim and Cut:
Using a sharp knife, trim the crusts off the sandwiches and cut them into quarters, either as triangles or rectangles, based on preference.
7. Optional Garnish:
If desired, top each sandwich quarter with a small sprig of fresh herbs like dill or mint for an elegant touch.
