Herbed Rice Pilaf with Sautéed Onions and Spices
Ingredients
- 2 cups rice
- 3 tablespoons oil
- 1 large onion, finely chopped
- 3 cups water
- 1 cup broth (vegetable or chicken)
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground turmeric
- 1/2 teaspoon ground black pepper
- 1 teaspoon salt
- 1/4 cup chopped fresh herbs (such as parsley and cilantro)
Instructions
1. Rinse and Soak Rice:
Rinse 2 cups of rice under cold water until the water runs clear. Soak rice in cold water for about 15 minutes, then drain thoroughly.
2. Prepare Aromatics:
Heat 3 tablespoons of oil in a large saucepan over medium heat. Add 1 large finely chopped onion and sauté for 5 minutes or until the onion becomes translucent and begins to brown.
3. Add Spices:
Stir in 1 teaspoon of ground cumin, 1 teaspoon of ground coriander, 1/2 teaspoon of ground turmeric, and 1/2 teaspoon of ground black pepper. Cook for about 1 minute until the spices release their aroma.
4. Combine Rice and Liquids:
Add the drained rice to the pan, stirring frequently. Cook for 3 minutes, ensuring the rice grains are well coated with the oil and spices.
5. Simmering:
Pour in 3 cups of water and 1 cup of broth. Add 1 teaspoon of salt. Bring to a boil, then reduce the heat to low, cover the pan, and cook for 18 minutes or until the rice is tender and liquid is fully absorbed.
6. Add Herbs:
Remove from heat, allowing it to sit covered for another 5 minutes. Fluff rice with a fork and gently stir in 1/4 cup of chopped fresh herbs.
7. Serve:
Transfer the herbed rice pilaf to a serving dish and garnish with additional herbs, if desired.
