Homemade Pepperoni and Mushroom Pizza with Fresh Mozzarella and Parmesan



Ingredients



For the Dough:
- 2 1/4 cups all-purpose flour
- 1 packet (2 1/4 tsp) active dry yeast
- 3/4 cup warm water
- 1 tsp salt
- 1/2 tsp sugar
- 1 tbsp olive oil

For the Toppings:
- 1 cup tomato sauce
- 8 oz fresh mozzarella, sliced
- 1/2 cup ricotta cheese
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 4 oz pepperoni slices
- 4 oz mushrooms, sliced
- A handful of fresh basil leaves
- Salt and pepper to taste
- 1 tbsp olive oil

Instructions



1. Prepare the Dough:
- In a large mixing bowl, combine warm water, yeast, and sugar. Stir and let it sit for about 5 minutes, or until the yeast becomes foamy.
- Add the flour, salt, and olive oil to the yeast mixture. Mix until a dough forms.
- Knead the dough on a floured surface for approximately 6-8 minutes until smooth and elastic.
- Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm environment for about 1 hour, or until doubled in size.

2. Preheat the Oven:
- About 20 minutes before the dough has finished rising, preheat your oven to 475°F (245°C). Place a pizza stone or an inverted baking sheet in the oven to heat.

3. Prepare the Toppings:
- Slice the fresh mozzarella and mushrooms. Mince the garlic. Set aside.

4. Assemble the Pizza:
- Once the dough has risen, punch it down gently. Roll it out on a lightly floured surface into a 12-inch circle.
- Carefully transfer the dough onto a piece of parchment paper.
- Spread the tomato sauce evenly over the dough, leaving a small border for the crust.
- Distribute the minced garlic over the sauce for extra flavor.
- Add slices of fresh mozzarella, dollops of ricotta, followed by pepperoni, mushrooms, and some torn basil leaves.
- Drizzle a little olive oil over the toppings and season with salt and pepper.

5. Bake the Pizza:
- Carefully slide the parchment paper with the assembled pizza onto the hot pizza stone or baking sheet in the oven.
- Bake for about 12-15 minutes, or until the crust is golden and the cheese is bubbly.
- In the last two minutes of baking, sprinkle grated Parmesan cheese over the pizza.
- Remove from the oven and let it cool for a minute. Garnish with fresh basil before slicing and serving.
