Ingredients

- 1/2 cup Greek yogurt
- 1/2 cup buttermilk
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice

Fruit:
- 2 cups apples, peeled, cored, and chopped

Topping:
- 3 tablespoons unsalted butter, melted
- 3 tablespoons maple syrup
- 1/4 cup rolled oats

Instructions



1. Preheat Oven:
Preheat your oven to 350°F (175°C).

2. Prepare Baking Pan:
Grease a 9x9-inch baking pan with unsalted butter or line it with parchment paper for easy removal.

3. Mix Dry Ingredients:
In a large bowl, combine 1 1/2 cups all-purpose flour, 1 teaspoon baking powder, 1/2 teaspoon baking soda, 1/4 teaspoon salt, 1 teaspoon ground cinnamon, 1/2 teaspoon ground nutmeg, and 1/2 cup rolled oats. Stir until thoroughly mixed.

4. Combine Wet Ingredients:
In a separate bowl, whisk together 1/2 cup vegetable oil, 1/2 cup honey, 1 cup unsweetened applesauce, 1/2 cup Greek yogurt, 1/2 cup buttermilk, 1 teaspoon vanilla extract, and 1 tablespoon lemon juice until smooth.

5. Incorporate Dry Ingredients:
Gradually incorporate the dry ingredients into the wet mixture by gently folding until just combined. Do not overmix to ensure a tender cake.

6. Add Apples:
Gently fold the 2 cups of chopped apples into the batter until evenly distributed.
