Indulgent Citrus Mascarpone Parmesan Pasta
Ingredients
- 8 oz pasta of your choice
- 1 cup mascarpone cheese
- 1 cup freshly grated Parmigiano Reggiano cheese
- 1/2 cup freshly grated Pecorino Romano cheese
- 1 tablespoon lemon zest
- 2 tablespoons fresh lemon juice
- 2 tablespoons unsalted butter
- Salt and pepper to taste
- 1/4 cup reserved pasta water
- Fresh basil leaves for garnish (optional)
Instructions
1. Prepare the Pasta
- Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente.
- Reserve 1/4 cup of the pasta water, then drain the pasta. Set aside.
2. Create the Citrus Cheese Sauce
- In a large sauté pan, melt the unsalted butter over medium heat.
- Add the lemon zest and lemon juice to the melted butter, stirring gently for about 1 minute to infuse the citrus flavor.
3. Combine with Mascarpone
- Reduce the heat to low and add the mascarpone cheese to the pan. Stir until smooth and well incorporated into the citrus mixture.
4. Incorporate the Grated Cheeses
- Gradually add the Parmigiano Reggiano and Pecorino Romano to the mascarpone mixture, stirring continuously until fully melted and combined.
5. Adjust the Sauce Consistency
- Add the reserved pasta water little by little, stirring until you reach a creamy, desired consistency.
6. Add the Pasta
- Add the cooked pasta to the pan with the sauce, tossing well to ensure the pasta is evenly coated.
- Season with salt and pepper to taste.
7. Serve and Garnish
- Divide the pasta between four plates. Garnish with fresh basil leaves if desired.
- Serve immediately and enjoy the rich and indulgent flavors.
