Indulgent Irish Coffee Toffee Parfait
Ingredients
- 1 cup Irish cream liqueur
- 2 cups strong brewed coffee, cooled
- 1/4 cup brown sugar
- 1/4 cup turbinado sugar
- 1/3 cup Irish whiskey
- 1 tablespoon Licor 43
- 1 teaspoon vanilla extract
- 1 cup toffee bits
- 2 cups whipped cream, chilled
Instructions
1. Prepare the Coffee Toffee Base:
- Preheat your oven to 350°F (175°C).
- In a medium bowl, combine 2 cups of cooled brewed coffee, 1/3 cup Irish whiskey, 1 tablespoon Licor 43, and 1 teaspoon vanilla extract. Stir until well combined.
- In an oven-safe dish, mix together 1 cup Irish cream liqueur, 1/4 cup brown sugar, and 1/4 cup turbinado sugar. Pour the coffee mixture over the liqueur blend and stir together gently.
- Place the dish in the preheated oven and bake for 45 minutes until the mixture reduces slightly and intensifies in flavor. Remove from oven and allow to cool to room temperature.
2. Layer the Parfait:
- In a clear parfait or dessert glass, start with a generous spoonful of toffee bits.
- Add a layer of the cooled coffee toffee base, covering the toffee bits.
- Add a layer of whipped cream, spreading it evenly across the top of the coffee toffee layer.
3. Repeat the Layers:
- Continue layering toffee bits, coffee toffee base, and whipped cream until the glass is almost full, finishing with a layer of whipped cream.
- Sprinkle additional toffee bits on top for garnish.
4. Chill Before Serving:
- Place the assembled parfaits in the refrigerator to chill for at least 1 hour, allowing the flavors to meld and the texture to set.
