Indulgent Microwave Chocolate Pudding
Ingredients
- 2 cups oat milk
- 1/3 cup cocoa powder
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 tablespoon plant-based stabilizers (such as cornstarch or agar-agar)
- 1/4 teaspoon salt
- 2 ounces dark chocolate, finely chopped
Instructions
1. Prepare the Mixture:
In a medium-sized microwave-safe bowl, whisk together cocoa powder, granulated sugar, plant-based stabilizers, and salt until well combined and no lumps remain.
2. Add Oat Milk:
Gradually add oat milk to the dry ingredients, whisking continuously to form a smooth, uniform mixture. Ensure no clumps of dry ingredients remain.
3. Microwave Cooking:
Place the bowl in the microwave and heat on high for 3 minutes. Carefully remove from the microwave and whisk the mixture thoroughly.
4. Add Chocolate and Flavor:
Add the finely chopped dark chocolate and vanilla extract to the mixture. Stir continuously until the chocolate melts completely and the mixture is silky smooth.
5. Thicken the Pudding:
Return the bowl to the microwave and heat on high for another 2 to 3 minutes, or until the pudding begins to thicken, stirring halfway through. It should coat the back of a spoon when ready.
6. Chill and Set:
Allow the pudding to cool in the refrigerator for at least 2 hours, or until it sets and develops a rich, creamy texture.
7. Serve:
Once set, serve chilled. Optionally, garnish with a sprinkle of cocoa powder or chocolate shavings for an added touch of elegance.
