Indulgent Peanut Butter Cream Pie
Ingredients
- 1 pre-made pie shell
- 1 cup crunchy peanut butter
- 1 cup confectionery sugar
- 2 tablespoons butter, softened
- 1 can (12 oz) evaporated milk
- 1/4 teaspoon salt
- 2 tablespoons cornstarch
- 3 large eggs, separated
- 1/2 cup regular sugar
- 1 teaspoon vanilla flavoring
Instructions
1. Preheat the Oven:
- Preheat your oven to 350°F.
2. Prepare the Peanut Butter Layer:
- In a large mixing bowl, combine 1 cup of crunchy peanut butter, 1 cup of confectionery sugar, and 2 tablespoons of softened butter.
- Mix until smooth and well combined.
- Spread the mixture evenly into the bottom of the pie shell. Set aside.
3. Make the Custard:
- In a medium saucepan, pour the can of evaporated milk and turn the heat to medium.
- Add 1/4 teaspoon salt and 2 tablespoons cornstarch, stirring until dissolved.
- In a separate small bowl, lightly beat the 3 egg yolks. Gradually add the yolks to the milk mixture, stirring constantly to prevent curdling.
- Add 1/2 cup regular sugar and continue to cook, stirring, until the mixture thickens and coats the back of a spoon (about 8 to 10 minutes).
- Remove the saucepan from the heat and stir in 1 teaspoon of vanilla flavoring.
- Let the custard cool slightly.
4. Form the Pie:
- Pour the warm custard over the peanut butter layer in the pie shell, spreading evenly.
5. Create the Meringue Topping:
- In a clean, dry bowl, beat the 3 egg whites until soft peaks form.
- Gradually add remaining regular sugar (1/4 cup) while continuing to beat until stiff peaks form.
6. Bake:
- Spoon the meringue over the pie, spreading it evenly to seal the edges of the crust.
- Bake in the preheated oven for 12 to 15 minutes, or until the meringue is golden brown.
7. Chill and Serve:
- Remove the pie from the oven and allow it to cool at room temperature for about 1 hour.
- Refrigerate the pie for at least 2 hours before serving to set completely.
