Irresistible Cajun Shrimp Skillet with a Zesty Herb Mayo
Ingredients
- 1 pound shrimp, peeled and deveined
- 1 large red bell pepper, chopped
- 2 stalks celery, diced
- 3 green onions, chopped (reserve light green tops for garnish)
- 1/2 cup mayonnaise
- 2 tablespoons lemon juice
- 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 3 cups water
- 2 cloves garlic, minced
- 1 bay leaf
- 1 tablespoon Cajun seasoning
Instructions
1. Prep the Ingredients
- Peel and devein the shrimp. Set aside.
- Chop the bell pepper, dice the celery, and slice the green onions. Reserve the light green tops of the green onions for garnish.
2. Prepare the Zesty Herb Mayo
- In a small bowl, mix together the mayonnaise, lemon juice, dill, 1/2 teaspoon salt, and black pepper. Cover and refrigerate.
3. Cook the Shrimp
- In a large skillet over medium heat, add the water and bring to a gentle simmer.
- Add minced garlic, bay leaf, and 1/2 teaspoon salt to the water. Simmer for 5 minutes.
- Add the shrimp to the skillet, cooking until they turn pink and opaque, about 2-3 minutes.
- Remove shrimp from the skillet with a slotted spoon and set aside. Discard the liquid from the skillet.
4. Cook the Vegetables
- In the same skillet, heat a drizzle of olive oil over medium heat.
- Add the bell pepper and celery. Sauté for about 5-7 minutes until the vegetables are tender.
- Sprinkle the Cajun seasoning over the vegetables, stir to coat evenly.
5. Combine and Serve
- Add the cooked shrimp back into the skillet with the vegetables. Toss to combine and heat through for another 2-3 minutes.
- Remove from heat and mix in the chopped green onions.
- Serve the shrimp and vegetable mixture on a platter with a side of zesty herb mayo. Garnish with reserved green onion tops.
