Irresistible Cherry Almond Cake Delight
Ingredients
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 teaspoon almond extract
- 2 cups fresh cherries, pitted and halved
Instructions
1. Preheat the Oven:
Preheat your oven to 350°F (175°C).
2. Prepare the Baking Pan:
Grease a 9-inch round cake pan with butter and line the bottom with parchment paper. Set aside.
3. Mix Dry Ingredients:
In a medium bowl, whisk together the all-purpose flour, baking powder, and salt. Set aside.
4. Cream Butter and Sugar:
In a large mixing bowl, beat the softened unsalted butter and granulated sugar together using an electric mixer on medium speed until light and fluffy, about 4 minutes.
5. Add Eggs and Almond Extract:
Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next. Mix in almond extract until combined.
6. Combine Wet and Dry Ingredients:
Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined.
7. Fold in the Cherries:
Using a spatula, gently fold in the pitted and halved fresh cherries.
8. Transfer to the Pan:
Pour the batter into the prepared cake pan, smoothing the top with the spatula.
9. Bake:
Place the pan in the preheated oven and bake for 35-40 minutes, or until a toothpick inserted into the center of the cake comes out clean.
10. Cool:
Remove the cake from the oven and let it cool in the pan for 10 minutes. Then, transfer it to a wire rack to cool completely.
