Irresistible Cherry Hand Pies with a Buttery Crust



Ingredients



- Pie dough (enough for a double crust)
- 1 can (21 oz) cherry pie filling
- 2 tablespoons unsalted butter, cut into small cubes
- 1 large egg
- 1 tablespoon water
- 1/4 teaspoon kosher salt
- 2 tablespoons coarse sugar for sprinkling

Instructions



1. Preheat the Oven:
Set your oven to 400°F (204°C) and allow it to fully preheat to ensure even baking.

2. Prepare the Dough:
On a lightly floured surface, roll out the pie dough to approximately 1/8 inch thickness. Cut out circles approximately 4 to 5 inches in diameter using a round cutter or the rim of a suitable glass.

3. Fill the Pies:
Place a heaping tablespoon of cherry pie filling in the center of each dough circle. Add a small cube of butter atop the filling for added richness.

4. Seal the Pies:
In a small bowl, whisk together the egg and water to form an egg wash. Lightly brush the edges of the dough circles with the egg wash. Fold the dough over the filling to create a half-moon shape and press the edges firmly with a fork to seal.

5. Decorate and Vent:
Arrange the pies on a parchment-lined baking sheet. Brush the tops with the remaining egg wash. Sprinkle each pie with a pinch of kosher salt for flavor balance and coarse sugar for texture. Cut a small slit on the top of each pie for steam to escape during baking.

6. Bake:
Place the baking sheet in the preheated oven. Bake for about 20-25 minutes or until the pies are golden brown and the filling is bubbly.

7. Cool:
Remove the pies from the oven and allow them to cool for a few minutes on the baking sheet before transferring them to a wire rack to cool completely. This will help the filling to set slightly.
