Irresistible Chicken Veggie Stir Fry with Ginger Soy Rice
Ingredients
Main Components:
- 1 pound boneless, skinless chicken breast, thinly sliced
- 1 cup long-grain white rice
- 3 large eggs, lightly beaten
Vegetables:
- 1 cup peas
- 1 cup carrots, diced
- 2 green onions, sliced thinly
Aromatics:
- 4 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
Sauce:
- 1/4 cup soy sauce
- 2 tablespoons sesame oil
Others:
- 2 tablespoons cooking oil (vegetable, canola, or similar)
- 1 tablespoon sesame seeds for garnish
Instructions
Step 1: Prepare the Rice
1. Rinse 1 cup of rice under cold water until the water runs clear to remove excess starch.
2. Cook rice according to package instructions or using a rice cooker for about PT20M (20 minutes). Once cooked, set aside to cool slightly.
Step 2: Cook the Chicken
1. Heat 1 tablespoon of cooking oil in a large wok or skillet over medium-high heat.
2. Add the sliced chicken in a single layer, cooking for 3-4 minutes on each side until golden brown and cooked through. Remove chicken from the pan and set aside.
Step 3: Stir Fry the Vegetables
1. In the same pan, add the remaining tablespoon of cooking oil. Toss in the minced garlic and ginger, stir-frying for about 30 seconds until fragrant.
2. Add the diced carrots and peas, stir-frying for 4-5 minutes until they soften.
Step 4: Scramble the Eggs
1. Move the vegetables to one side of the pan.
2. Pour the beaten eggs onto the other side, stirring gently until scrambled and fully cooked. Mix with the vegetables.
Step 5: Combine and Serve
1. Return the cooked chicken to the pan. Pour the soy sauce and sesame oil over the mixture, combining well.
2. Add the cooked rice and toss everything together, ensuring the sauce coats all ingredients evenly. Stir in the sliced green onions.
3. Serve the stir fry hot, garnished with sesame seeds.
