Irresistible Cinnamon Molasses Peanut Butter Cookies
Ingredients
- 1 cup Peanut Butter (creamy or chunky)
- 1 cup Granulated Sugar
- 1 large Egg
- 1 teaspoon Baking Soda
- 1/4 teaspoon Salt
- 1 teaspoon Vanilla Extract
- 2 tablespoons Molasses
- 1 teaspoon Ground Cinnamon
Instructions
1. Preheat the Oven: Set your oven to 350°F and allow it to fully preheat while you prepare the cookie dough.
2. Mix the Wet Ingredients: In a large mixing bowl, combine 1 cup of peanut butter, 1 cup of sugar, 1 egg, 1 teaspoon of vanilla extract, and 2 tablespoons of molasses. Stir until the mixture is smooth and thoroughly combined.
3. Incorporate the Dry Ingredients: Add 1 teaspoon of baking soda, 1/4 teaspoon of salt, and 1 teaspoon of ground cinnamon to the wet ingredients. Mix until just combined, making sure not to overwork the dough.
4. Shape the Cookies: Using a tablespoon or cookie scoop, portion out the dough onto a parchment-lined baking sheet. Leave about 2 inches of space between each cookie to allow for spreading.
5. Flatten and Optional Decoration: Use a fork to gently press a crisscross pattern on each cookie. This will also flatten them just a bit for even cooking.
6. Bake: Place the cookies in the preheated oven and bake for approximately 10 minutes, or until the edges are lightly golden. Be mindful not to over-bake them, as they will continue to firm up slightly upon cooling.
7. Cool: Remove the cookies from the oven and let them cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
