Irresistible Creamy Pecan Cheesecake Bars
Ingredients
- 1 box yellow cake mix (15.25 oz)
- 1 large egg
- 1/2 cup unsalted butter, melted
- 1 package cream cheese (8 oz), softened
- 1 cup powdered sugar
- 3 large eggs
- 1 cup pecans, chopped
- 1/4 cup unsalted butter, softened
Instructions
1. Prepare the Oven and Pan
Preheat your oven to 350°F (175°C). Lightly grease a 9x13 inch baking dish with butter or spray with a non-stick cooking spray for easy removal of the bars.
2. Create the Crust
In a medium-sized mixing bowl, combine the yellow cake mix, 1 large egg, and 1/2 cup melted butter. Stir until the mixture is well combined and crumbly. Press this mixture evenly into the bottom of the prepared baking dish to form the crust.
3. Prepare the Cheesecake Layer
In a separate large bowl, beat together the softened cream cheese and 1/4 cup softened butter until the blend is smooth and creamy. Gradually add in the powdered sugar, beating until fully incorporated. Fold in the chopped pecans.
4. Assemble the Layers
Pour the cream cheese mixture over the prepared crust, spreading it evenly with a spatula.
5. Create the Topping
In a small bowl, beat the remaining 3 large eggs until frothy. Gently pour over the cream cheese layer. The topping will add an elegant finish to your cheesecake bars.
6. Bake
Place the assembled dish in the preheated oven and bake for 45 minutes, or until the edges are golden brown and the center is set.
7. Cool and Serve
Allow the cheesecake bars to cool completely in the dish at room temperature for about 30 minutes before slicing and serving.
