Irresistible Italian Sausage Fettuccine with Parmigiano-Reggiano and Spinach



Ingredients



- 8 ounces Italian sausage, casing removed
- 12 ounces fettuccine
- 1 cup freshly grated Parmigiano-Reggiano cheese
- 4 tablespoons unsalted butter
- 3 cups baby spinach leaves
- 1 teaspoon salt
- 1 teaspoon fresh ground black pepper
- 2 tablespoons olive oil

Instructions



1. Prepare the Ingredients
Remove the casing from the Italian sausage and set aside. Grate the Parmigiano-Reggiano cheese and measure out the rest of your ingredients so they are ready to use.

2. Cook the Fettuccine
Bring a large pot of salted water to a boil over medium-high heat. Add the fettuccine and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set the fettuccine aside.

3. Sauté the Sausage
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the Italian sausage and cook, breaking it up with a wooden spoon, until browned and cooked through, about 5 minutes. Remove the sausage from the skillet and set aside.

4. Wilt the Spinach
In the same skillet, add the remaining tablespoon of olive oil. Add the baby spinach leaves and cook until wilted, about 2-3 minutes. Season with a pinch of salt and pepper.

5. Combine Ingredients
Lower the heat to medium and return the sausage to the skillet with the spinach. Add the drained fettuccine and the butter. Toss everything together, allowing the butter to melt and coat the pasta evenly.

6. Finish with Cheese
Gradually add the Parmigiano-Reggiano cheese, a handful at a time, tossing well with each addition. If the pasta seems dry, add reserved pasta water, 1/4 cup at a time, until the desired consistency is reached.

7. Season and Serve
Season the pasta with remaining salt and pepper to taste. Serve immediately, garnished with additional Parmigiano-Reggiano if desired.
