Irresistible Layered Fruit Pie with Sugar-Powdered Topping

Ingredients

For the Crust:
- 2 cups all-purpose flour
- 1 tablespoon sugar
- 1 teaspoon baking powder
- 1/2 cup vegetable oil
- 2 tablespoons milk

For the Filling:
- 1 can (21 oz) pie filling of choice (e.g., apple, cherry, or blueberry)
- 1 tablespoon cornstarch
- 1 tablespoon water

For the Topping:
- 2 large eggs
- 1/4 cup powdered sugar

Instructions

1. Prepare the Crust:
1. Preheat your oven to 350°F (175°C).
2. In a large mixing bowl, combine 2 cups of all-purpose flour, 1 tablespoon of sugar, and 1 teaspoon of baking powder.
3. Make a well in the center, add 1/2 cup of vegetable oil and 2 tablespoons of milk.
4. Stir until the mixture forms a homogeneous dough. If the dough is too crumbly, add a few more drops of milk until it reaches a pliable consistency.

2. Form the Crust:
1. Press the dough evenly into a 9-inch pie pan, ensuring it covers the bottom and sides adequately.
2. Use a fork to prick the base lightly to prevent bubbling during baking.

3. Prepare the Filling:
1. Drain excess liquid from the 21 oz can of pie filling.
2. In a small bowl, dissolve 1 tablespoon of cornstarch in 1 tablespoon of water, then add it to the pie filling. Stir until well combined.
3. Pour the filling evenly over the prepared crust.

4. Prepare the Topping:
1. In a separate bowl, beat 2 large eggs until smooth. Mix in 1/4 cup of powdered sugar.
2. Pour the egg mixture evenly over the pie filling, allowing some of it to seep into the filling for an enriched taste.

5. Bake:
1. Place the pie in the preheated oven and bake for 40 minutes, or until the top is golden brown and the filling is bubbling.
2. To ensure the crust is cooked through, check that a skewer inserted into the pie comes out clean.

6. Cool and Serve:
1. Let the pie cool on a wire rack for at least 20 minutes before serving. This allows the filling to set, making slicing easier.
2. Optionally, dust with additional powdered sugar before serving.
