Irresistible Microwave Peanut Brittle



Ingredients


- 1 cup white sugar
- 1/2 cup light corn syrup
- 1/8 teaspoon salt
- 1 cup raw peanuts
- 1 tablespoon butter
- 1 tablespoon margarine
- 1 teaspoon baking soda
- 1 teaspoon vanilla extract

Instructions


1. Prepare Your Workspace:
Gather all ingredients and have them ready for quick addition, as the cooking process is rapid. Prepare a baking sheet with a thin layer of butter to prevent the brittle from sticking.

2. Combine Ingredients in Microwave-Safe Bowl:
In a large microwave-safe bowl, mix together the white sugar, light corn syrup, and salt. Stir until the sugar is mostly dissolved.

3. Microwave Initial Mixture:
Microwave the sugar mixture on high power for approximately 4 minutes. The mixture should begin to bubble vigorously.

4. Add Peanuts:
Carefully stir in the raw peanuts to the hot syrup. Return the bowl to the microwave and heat on high for another 3 to 4 minutes. Keep a close eye to avoid burning; the mixture should achieve a golden brown hue.

5. Incorporate Butter and Margarine:
Remove the bowl and add in the butter and margarine. Stir thoroughly until they are melted and fully incorporated. Microwave again on high for an additional 1 to 2 minutes.

6. Final Additions:
Quickly stir in the baking soda and vanilla extract. The mixture will foam; this is normal and essential for creating the brittle's airy texture.

7. Spread and Cool:
Pour the foamy mixture onto the prepared buttered baking sheet, spreading it out as thinly as possible with a spatula. Let it cool completely until it hardens, approximately 30 minutes.

8. Break into Pieces:
Once cooled, break the peanut brittle into bite-sized pieces and transfer to an airtight container for storage.
