Irresistible Mixed Berry Pie with a Flaky Crust



Ingredients



- 1 Kroger Traditional Pie Crust Ready-to-Bake
- 1 cup fresh strawberries, hulled and halved
- 1 cup fresh blueberries
- 1 cup fresh raspberries
- 1 cup granulated sugar
- 3 tablespoons cornstarch
- 1 teaspoon lemon zest
- 1 tablespoon lemon juice
- 1/4 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
- 2 tablespoons unsalted butter, cut into small pieces
- 1 egg, lightly beaten, for egg wash
- 1 tablespoon sugar, for sprinkling

Instructions



1. Preheat the oven:
- Set your oven to 425°F (220°C). Allow it to fully preheat while you prepare the filling.

2. Prepare the pie crust:
- Gently unroll the Kroger Traditional Pie Crust and fit it into a 9-inch pie pan. Trim any excess dough hanging over the edges of the pie pan.

3. Combine the berries:
- In a large mixing bowl, combine the strawberries, blueberries, and raspberries.

4. Make the filling:
- Add the granulated sugar, cornstarch, lemon zest, lemon juice, cinnamon, and vanilla extract to the berry mixture. Gently stir until the berries are evenly coated and the cornstarch dissolves.

5. Assemble the pie:
- Pour the berry filling into the prepared pie crust. Dot the filling with small pieces of unsalted butter.

6. Prepare the top crust:
- If you desire a lattice top, cut the second pie crust into strips and create a lattice pattern over the filling. Alternatively, unroll the second pie crust and lay it over the filling, cutting slits to allow steam to escape.

7. Seal and finish the crust:
- Crimp the edges of the pie crust to seal. Brush the top of the pie with the beaten egg and sprinkle with sugar.

8. Bake the pie:
- Place the pie in the preheated oven and bake for 15 minutes at 425°F (220°C). Lower the temperature to 375°F (190°C) and continue baking for an additional 35-40 minutes, or until the crust is golden brown and the filling is bubbling.

9. Cool and serve:
- Allow the pie to cool on a wire rack for at least 2 hours before serving, which helps the filling set.
