Irresistible Oven-Baked Nutty Fruit Granola Bars
Ingredients
Dry Ingredients:
- 2 cups old-fashioned oats
- 1 cup oat flour

Wet Ingredients:
- 1/4 cup almond butter
- 1/4 cup peanut butter
- 2 tablespoons sunflower butter
- 1/4 cup honey
- 1/4 cup maple syrup
- 2 tablespoons olive oil
- 2 tablespoons melted butter
- 1 teaspoon vanilla extract
- 2 tablespoons water
- 1 large egg, beaten
Instructions
1. Preheat the Oven:
Preheat your oven to 350°F (175°C).
2. Prepare the Baking Sheet:
Line a 9x13-inch baking pan with parchment paper, ensuring excess hangs over the sides for easy lifting.
3. Mix the Dry Ingredients:
In a large mixing bowl, combine the oats, oat flour, coconut sugar, granulated sugar, sea salt, ground cinnamon, walnuts, pecans, pumpkin seeds, dried coconut flakes, dried cranberries, raisins, golden raisins, dried apricots, dried figs, flaxseed meal, and flaxseeds. Stir until evenly distributed.
4. Combine Wet Ingredients:
In a separate medium-sized bowl, mix together the almond butter, peanut butter, sunflower butter, honey, maple syrup, olive oil, melted butter, vanilla extract, and water. Whisk until smooth and fully combined.
5. Mix in the Egg:
Add the beaten egg to the wet mixture and whisk to incorporate.
6. Combine Wet and Dry Mixtures:
Pour the wet ingredients over the dry ingredients. Stir thoroughly until all the dry ingredients are coated and the mixture is fully combined.
7. Transfer to Baking Pan:
Spread the granola mixture evenly into the prepared baking pan. Press down firmly with a spatula to ensure the mixture is compact and level.
8. Bake:
Place in the preheated oven and bake for 25-30 minutes, or until the edges are golden brown and the center is set.
9. Cool Completely:
Allow the granola bars to cool in the pan for about 1 hour, then use the parchment paper overhang to lift them out of the pan. Place on a cutting board and cut into bars.
10. Store:
Store the granola bars in an airtight container at room temperature for up to one week or freeze for longer storage.
