Irresistible Oven-Roasted Garlic Herb Potatoes
Ingredients
- 4 large russet potatoes
- 3 tablespoons olive oil
- 2 teaspoons kosher salt
- 1 teaspoon freshly ground black pepper
- 1 tablespoon garlic powder
- 2 teaspoons dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon paprika

Instructions
1. Preparation
- Preheat your oven to 425°F.
- Scrub the russet potatoes under running water to clean off any dirt. Pat them dry with a towel.
- Cut each potato into 1-inch cubes for even cooking.
2. Seasoning the Potatoes
- In a large mixing bowl, combine olive oil, salt, pepper, garlic powder, oregano, thyme, and paprika.
- Add the potato cubes to the bowl, tossing them with the seasoned oil until the potatoes are evenly coated.
3. Roasting
- Line a baking sheet with parchment paper or lightly coat it with non-stick cooking spray.

4. Finishing Touches
- Once the potatoes are golden brown and crispy on the edges, remove them from the oven.
- Allow them to cool slightly on the baking sheet for about 5 minutes.
- Transfer to a serving dish, sprinkle with fresh parsley, and serve immediately.
