Irresistible Peanut Butter Cream Pie



Ingredients



- Crust:
- 1 1/4 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/3 cup white granulated sugar
- 1/2 cup unsalted butter, melted

- Filling:
- 1/2 cup smooth peanut butter
- 1/4 cup buttermilk
- 1 teaspoon vanilla extract
- 2 large eggs, at room temperature

- Topping:
- 1/2 cup powdered sugar
- 2 tablespoons unsalted butter, softened
- 1 to 2 tablespoons water (as needed for consistency)

Instructions



1. Prepare the Crust:
- Preheat your oven to 350°F (175°C).
- In a medium bowl, combine the all-purpose flour, baking soda, salt, and white granulated sugar. Mix well.
- Stir in the melted butter and mix until the ingredients form a crumbly texture.
- Press the mixture evenly into a 9-inch pie pan to form the crust.
- Prick the crust with a fork and bake in the preheated oven for about 10 minutes until lightly golden. Remove and let cool.

2. Make the Filling:
- In a mixing bowl, blend together the peanut butter, buttermilk, and vanilla extract until smooth.
- Add the eggs one at a time, beating well after each addition.
- Pour the filling into the pre-baked crust, spreading it evenly.

3. Bake the Pie:
- Reduce the oven temperature to 325°F (160°C).
- Bake the pie for 30 to 35 minutes, or until the filling is set and slightly jiggles in the center.
- Remove from the oven and allow to cool to room temperature.

4. Prepare the Topping:
- In a small bowl, beat the powdered sugar and softened butter together until light and fluffy.
- Slowly add water, a tablespoon at a time, until you reach a smooth, spreadable consistency.

5. Assemble the Pie:
- Once the pie is cooled, spread the buttercream topping over the filling evenly.
- Chill the pie in the refrigerator for at least an hour before serving.
