Irresistible Roasted Herb Chicken & Vegetable Skillet
Ingredients
- 1 whole chicken (about 4 pounds)
- 2 tablespoons olive oil
- 1 tablespoon butter
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 tablespoon fresh thyme leaves
- 1 tablespoon fresh rosemary, chopped
- 3 cloves garlic, minced
- 4 medium carrots, peeled and cut into 1-inch pieces
- 1 pound baby potatoes, halved
- 1 large red onion, quartered
- 1 lemon, sliced
Instructions
1. Preheat the Oven: Preheat your oven to 425°F (220°C).
2. Prepare the Chicken: Pat the whole chicken dry with paper towels. Rub 1 tablespoon of olive oil over the entire chicken. Season the chicken with 1 teaspoon of salt and 1/2 teaspoon of black pepper, ensuring even coverage. Stuff the cavity with half of the fresh thyme, rosemary, and minced garlic.
3. Season the Vegetables: In a large bowl, combine the carrots, baby potatoes, and red onion. Add 1 tablespoon of olive oil, the remaining salt, pepper, thyme, rosemary, garlic, and toss to coat the vegetables thoroughly.
4. Sauté the Chicken: Melt the butter in a large oven-safe skillet over medium heat. Once melted, add the chicken, breast-side down, and sear for about 5 minutes until golden brown. Turn the chicken over carefully.
5. Add Vegetables and Roast: Arrange the seasoned vegetables and lemon slices around the chicken in the skillet. Transfer the skillet to the preheated oven.
6. Roast the Dish: Roast in the oven for 1 hour and 15 minutes, or until the internal temperature of the chicken reaches 165°F (75°C) and the juices run clear. Baste the chicken with the pan juices halfway through the roasting process.
7. Rest and Serve: Once cooked through, remove the skillet from the oven and let the chicken rest for 10 minutes before carving. Serve the chicken with the roasted vegetables and pan juices spooned over the top.
