Irresistible Roasted Strawberry Almond Cake
Ingredients
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 2 large eggs
- 1 cup ground almonds
- 1 cup all-purpose flour
- 1/2 teaspoon salt

- 1/2 cup sour cream
- 1 cup fresh strawberries, hulled and quartered
- 1/2 cup sliced almonds
Instructions
1. Preheat Oven
Preheat your oven to 350°F (175°C). Prepare a 9-inch round cake pan by greasing it with butter and dusting lightly with flour.
2. Cream Butter and Sugar
In a large mixing bowl, beat together the softened butter and granulated sugar until light and fluffy, about 3 minutes.
3. Add Extracts and Eggs
Mix in the vanilla and almond extracts. Add the eggs one at a time, beating well after each addition until fully incorporated.
4. Incorporate Dry Ingredients
In a separate bowl, combine the ground almonds, all-purpose flour, salt, and baking powder. Gradually add the dry mixture to the wet ingredients, mixing until just combined.
5. Fold in Sour Cream
Gently fold in the sour cream using a spatula until smooth and evenly mixed.

Pour half of the batter into the prepared cake pan. Evenly distribute half of the strawberries over the batter.
7. Layer and Finish
Pour the remaining batter over the strawberries, spreading gently to cover. Top with the remaining strawberries and sliced almonds.
8. Bake the Cake
Bake in the preheated oven for 45 minutes, or until a toothpick inserted into the center comes out clean. Keep an eye on the almonds topping; cover loosely with foil if browning too quickly.
9. Cool and Serve
Allow the cake to cool in the pan for about 10 minutes before transferring to a wire rack to cool completely. Serve warm or at room temperature for a delightful dessert experience.
