Irresistible Sesame Chicken Stir Fry



Ingredients



- 2 large chicken breasts, cut into 1-inch cubes
- 2 tablespoons vegetable oil
- 1 tablespoon sesame oil
- 4 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1/2 cup chicken broth
- 1/4 cup honey
- 1/4 cup soy sauce
- 1 medium onion, sliced
- 1 red bell pepper, sliced
- 1 cup broccoli florets
- 1 medium zucchini, sliced into half-moons
- 1 cup mushrooms, sliced
- 1/2 cup water chestnuts, sliced
- 1/2 teaspoon red pepper flakes
- 2 tablespoons sesame seeds
- 2 tablespoons sriracha
- 1/4 cup peanuts, coarsely chopped

Instructions



1. Preparation
- Begin by preparing all ingredients. Cut the chicken breasts into 1-inch cubes, mince the garlic, and grate the ginger. Slice the onion, bell pepper, zucchini, and mushrooms. Prepare the broccoli florets and slice the water chestnuts.

2. Sear the Chicken
- Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat. Add the diced chicken and sear for about 5-7 minutes until golden brown and cooked through. Remove the chicken from the pan and set aside.

3. Sauté Aromatics
- In the same pan, add the remaining tablespoon of vegetable oil and the sesame oil. Add the minced garlic and grated ginger, sautéing for about 1 minute until fragrant.

4. Cook the Vegetables
- Add the sliced onion, red bell pepper, and broccoli florets to the pan. Stir-fry for about 3 minutes. Then, add the zucchini, mushrooms, and water chestnuts. Continue stir-frying for another 3-4 minutes until all vegetables are tender-crisp.

5. Combine
- Return the cooked chicken to the pan. Add chicken broth, honey, soy sauce, and red pepper flakes. Stir well to combine all ingredients. Allow the mixture to simmer for 2-3 minutes to thicken slightly.

6. Final Touches
- Stir in the sriracha and half of the sesame seeds. Adjust seasoning to taste. Use more sriracha if you prefer extra heat.

7. To Serve
- Transfer the stir fry to a serving dish. Garnish with the remaining sesame seeds and coarsely chopped peanuts.
