Irresistible Stir-Fried Chicken and Broccoli with Ginger-Soy Glaze



Ingredients



- 1 pound skinless, boneless chicken breasts, thinly sliced
- 2 tablespoons cornstarch
- 2 tablespoons soy sauce
- 2 tablespoons vegetable oil, divided
- 3 cloves garlic, finely minced
- 1 tablespoon fresh ginger, grated
- 3 cups broccoli florets
- 1 cup chicken stock
- 2 tablespoons dark soy sauce
- 1 tablespoon Shaoxing wine
- 1 teaspoon toasted sesame oil
- 1 teaspoon sugar
- 1/2 teaspoon ground white pepper

Instructions



1. Prepare the Chicken
In a medium bowl, combine the sliced chicken with 1 tablespoon of cornstarch and 2 tablespoons of soy sauce. Mix well to coat the chicken evenly. Let it marinate for at least 10 minutes.

2. Prepare the Stir-Fry Sauce
In a small bowl, whisk together the chicken stock, dark soy sauce, Shaoxing wine, toasted sesame oil, remaining 1 tablespoon of cornstarch, sugar, and ground white pepper. Set aside.

3. Cook the Chicken
Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat. Add the marinated chicken and stir-fry until the chicken is golden brown and cooked through, about 5 to 6 minutes. Remove the chicken from the wok and set aside.

4. Sauté Aromatics
In the same wok, add the remaining 1 tablespoon of vegetable oil. Add the minced garlic and grated ginger, stirring constantly for about 30 seconds until fragrant.

5. Stir-Fry the Broccoli
Add the broccoli florets to the wok and stir-fry for about 2 minutes. Then, add 2 tablespoons of water, cover, and steam the broccoli for another 2 minutes until it turns bright green and tender-crisp.

6. Combine and Serve
Return the cooked chicken to the wok. Pour the prepared stir-fry sauce over the chicken and broccoli. Stir well to coat everything evenly. Cook for an additional 2 to 3 minutes, allowing the sauce to thicken and glaze the chicken and broccoli. Remove from heat and serve immediately.
