Ingredients
- 2 cups cooked rice, preferably day-old
- 2 large eggs, beaten
- 1 tablespoon avocado oil
- 1 tablespoon toasted sesame oil
- 4 green onions, sliced (whites and greens separated)
- 3 garlic cloves, minced
- 1 tablespoon fresh ginger, grated
- 1 carrot, diced
- 1 zucchini, diced
- 1 cup frozen peas, thawed
- 3 tablespoons fried rice sauce
- 1 tablespoon butter
- 1 tablespoon sesame seeds
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons low-sodium soy sauce
- 1 tablespoon brown sugar
- 1 tablespoon rice vinegar
- 1 tablespoon mirin
- 1/4 teaspoon Chinese five spice
- 1 tablespoon sambal oelek chili paste
- 1 tablespoon gochujang
Instructions
1. Prepare the Sauce:
In a small bowl, combine fried rice sauce, soy sauce, brown sugar, rice vinegar, mirin, and Chinese five spice. Stir until the brown sugar dissolves completely. Set aside.
2. Heat the Oil:
In a large wok or skillet, heat the avocado oil and toasted sesame oil over medium-high heat for 1-2 minutes until shimmering.
3. Cook the Aromatics:
Add the white parts of the green onions, garlic, and ginger to the hot oil. Sauté for 30 seconds until fragrant but not browned.
4. Add Vegetables:
Add the diced carrot and zucchini to the wok. Stir-fry for 3-4 minutes until vegetables are tender-crisp.

Push the vegetables to one side of the wok. Pour the beaten eggs into the empty side. Stir the eggs gently until softly scrambled, then mix them with the vegetables.
6. Add Rice:
Add the cooked rice to the wok. Break up any clumps with a spatula. Stir to combine with the vegetables and egg.
7. Season and Flavor:
Pour the prepared sauce, sambal oelek, and gochujang over the rice mixture. Stir constantly for 2-3 minutes until the rice is evenly coated and heated through.
8. Final Touch:
Add the butter and stir until melted, ensuring the rice is glossy and fragrant. Sprinkle the sesame seeds, salt, and black pepper. Stir-fry for an additional minute.
9. Garnish and Serve:
Remove from heat. Toss with green onion tops. Serve immediately.
