Irresistible Strawberry Swirl Cheesecake Bars
Ingredients
Crust:
- 1 cup all-purpose flour
- 1/4 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsalted butter, melted
- 1/3 cup granulated sugar
Strawberry Swirl:
- 1/2 cup strawberry jam
- 1/2 tsp red food coloring or gel
- 1/4 cup freeze-dried strawberries, finely crushed
Cheesecake Filling:
- 8 oz cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1/2 cup sour cream
- 1/2 tsp vanilla extract
- 1/4 cup powdered sugar
Topping (optional):
- 1/4 cup milk
- Fresh strawberries, sliced, for garnish
Instructions
1. Preheat Oven:
- Preheat your oven to 350°F (180°C).
2. Prepare the Crust:
- In a mixing bowl, combine 1 cup flour, 1/4 tsp baking powder, 1/4 tsp baking soda, and 1/4 tsp salt.
- Add 1/2 cup melted butter and 1/3 cup granulated sugar. Mix until combined and crumbly.
- Press the mixture evenly into the bottom of a greased 9x9-inch baking pan.
- Bake for 10-12 minutes or until slightly golden and set. Remove from oven and let cool.
3. Make the Strawberry Swirl:
- In a small bowl, mix 1/2 cup strawberry jam with 1/2 tsp red food coloring and crushed freeze-dried strawberries.
- Set aside.
4. Prepare the Cheesecake Filling:
- In a large bowl, beat 8 oz softened cream cheese with 1/2 cup granulated sugar until smooth and creamy.
- Add 2 large eggs, one at a time, mixing well after each addition.
- Blend in 1/2 cup sour cream and 1/2 tsp vanilla extract until fully incorporated.
- Pour the cheesecake mixture over the cooled crust, spreading evenly with a spatula.
5. Create the Swirl:
- Drop spoonfuls of the strawberry jam mixture onto the cheesecake layer.
- Use a skewer or the tip of a knife to gently swirl the jam into the cheesecake, creating a marbled effect.
6. Bake:
- Bake in preheated oven for 25-30 minutes or until the edges are set and the center is slightly jiggly.
- Remove from oven and let cool at room temperature for 20 minutes, then chill in the refrigerator for at least 2 hours.
7. Serve:
- Before serving, drizzle (optional) 1/4 cup milk over the top for added moisture.
- Garnish with fresh sliced strawberries.
- Cut into bars and serve chilled.
