Irresistible Tres Leches Cake with Cherry Topping
Ingredients
For the Cake:
- 1 cup all-purpose flour
- 1 ½ teaspoons baking powder
- ¼ teaspoon salt
- 5 large eggs, separated
- 1 cup granulated sugar, divided
- ⅓ cup whole milk
- 1 teaspoon vanilla extract

- 1 can (14 oz) sweetened condensed milk
- ¼ cup whole milk

Instructions
1. Preheat the Oven:
- Preheat your oven to 350°F (177°C).
2. Prepare the Cake Batter:
- In a medium bowl, combine 1 cup of flour, 1 ½ teaspoons of baking powder, and ¼ teaspoon salt.
- In a separate large bowl, beat 5 egg yolks with ¾ cup of sugar on high speed until yolks are pale yellow. Add ⅓ cup milk and 1 teaspoon vanilla extract. Mix until combined.
- Gently fold the flour mixture into the egg yolk mixture until smooth.
3. Whip the Egg Whites:
- In another bowl, beat 5 egg whites on high speed until soft peaks form. Gradually add the remaining ¼ cup sugar, and continue beating until stiff peaks form.
4. Combine the Mixtures:
- Gently fold the whipped egg whites into the cake batter until evenly mixed.
5. Bake the Cake:
- Pour the batter into a greased 9x13-inch baking dish.
- Bake for 25 to 30 minutes or until a toothpick inserted into the center comes out clean.
- Let the cake cool slightly.
6. Prepare the Milk Mixture:
- In a mixing bowl, combine the evaporated milk, sweetened condensed milk, and ¼ cup of whole milk.
7. Soak the Cake:
- Pierce the top of the cooled cake several times with a fork.
- Slowly pour the milk mixture over the cake, allowing it to soak in completely.
8. Chill the Cake:
- Refrigerate the cake for at least 1 hour or until well chilled.
9. Add the Topping:
- Spread a thick layer of whipped topping over the chilled cake.
- Garnish with cherries before serving.
