Italian Antipasto Salad with Sautéed Salami and Mozzarella
Ingredients
- 4 cups lettuce, chopped
- 2 cups cabbage, shredded
- 1 bell pepper, sliced
- 1/2 red onion, thinly sliced
- 1 cucumber, sliced
- 1/2 cup olives, pitted and halved
- 1/4 cup pepperoncini, sliced
- 2 tomatoes, diced
- 1/2 pound salami, sliced into strips
- 8 ounces mozzarella, cubed
- 1/2 cup Parmesan, grated
- 1/4 cup fresh basil leaves, torn
Instructions
1. Prepare the Vegetables:
- Wash and chop the lettuce into bite-sized pieces and place in a large mixing bowl.
- Add the shredded cabbage, sliced bell pepper, and thinly sliced red onion to the bowl.
- Slice the cucumber and add it along with the halved olives, sliced pepperoncini, and diced tomatoes.
2. Sauté the Salami:
- Heat a large skillet over medium heat on the stove.
- Add the salami strips and sauté for about 4 minutes or until crispy and fragrant. Stir occasionally to ensure even cooking.
- Remove salami from the skillet and drain on a paper towel-lined plate, allowing excess grease to be absorbed.
3. Mix the Salad:
- Add the sautéed salami and cubed mozzarella to the vegetable mixture in the bowl.
- Gently toss all ingredients to combine, ensuring the mozzarella and salami are evenly distributed.
4. Add the Finishings:
- Sprinkle the grated Parmesan and torn fresh basil leaves over the salad.
- Serve the salad fresh while the salami is still warm for a delightful textural contrast.
