Italian Citrus Amaro Cake
Ingredients
- 1/2 cup olive oil
- 3 large eggs
- 1 cup granulated sugar
- 3/4 cup whole milk
- 2 tablespoons lemon juice
- 1 tablespoon lemon zest
- 1 tablespoon orange zest
- 2 teaspoons vanilla extract
- 1/4 cup Amaro del Capo
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon kosher salt
- 2 tablespoons turbinado sugar
- 1/4 cup powdered sugar (for dusting)
Instructions
1. Preheat the Oven:
Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan with olive oil and line the bottom with parchment paper.
2. Mix Wet Ingredients:
In a large mixing bowl, whisk together the eggs and granulated sugar until pale and slightly thickened. Stir in the olive oil, whole milk, lemon juice, lemon zest, orange zest, vanilla extract, and Amaro del Capo until well combined.
3. Combine Dry Ingredients:
In a separate bowl, sift together the all-purpose flour, baking soda, baking powder, and kosher salt.
4. Combine Wet and Dry:
Gradually add the dry ingredients into the wet mixture, stirring gently with a spatula or wooden spoon until the batter is smooth and no lumps remain.
5. Pour and Sprinkle:
Pour the batter into the prepared cake pan. Evenly sprinkle the top with turbinado sugar for a crunchy crust.
6. Bake the Cake:
Place the cake in the preheated oven and bake for 35 to 40 minutes, or until a toothpick inserted into the center comes out clean. The top should be golden brown and firm to the touch.
7. Cool and Dust:
Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack. Once completely cool, dust the top with powdered sugar.
