Italian Parsley and Lemon Zest Chicken Salad
Ingredients
- 2 cups cooked, shredded chicken breast
- 1 cup Italian parsley, finely chopped
- 1/2 cup celery, diced
- 1/2 cup red onion, finely chopped
- 1/2 cup mayonnaise

- 4 cups mixed salad greens
Instructions
1. Prepare the Ingredients:
- Begin by finely chopping the Italian parsley. Dice the celery and red onion, and zest the lemon using a zester or the fine side of a grater.
2. Make the Dressing:
- In a medium-sized bowl, combine the mayonnaise, lemon juice, lemon zest, and Dijon mustard. Whisk together until smooth.
3. Combine the Salad:
- In a large mixing bowl, add the shredded chicken, Italian parsley, diced celery, and red onion. Pour the dressing over the top.
