Key Lime Delight Pie with Graham Cracker Crust



Ingredients



For the Graham Cracker Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/3 cup unsalted butter, melted
- 1/4 teaspoon fine sea salt

For the Key Lime Filling:
- 1 tablespoon lime zest
- 1/2 cup lime juice, freshly squeezed
- 1 can (14 ounces) sweetened condensed milk
- 1/2 cup heavy cream
- 4 egg yolks
- 1/4 teaspoon vanilla extract
- 1/4 teaspoon salt

For the Whipped Cream Topping:
- 1 cup heavy cream
- 1/4 cup powdered sugar
- 1/2 teaspoon vanilla extract

Instructions



1. Prepare the Oven and Pan:
- Preheat your oven to 350°F (175°C).
- Lightly grease a 9-inch pie pan or line it with parchment paper.

2. Make the Graham Cracker Crust:
- In a medium bowl, combine 1 1/2 cups of graham cracker crumbs, 1/4 cup granulated sugar, 1/3 cup melted unsalted butter, and 1/4 teaspoon of fine sea salt.
- Stir until the mixture resembles wet sand.
- Press the mixture evenly into the bottom and up the sides of the prepared pie pan, using the back of a spoon or the bottom of a measuring cup to compact it.
- Bake the crust in the preheated oven for 8 minutes. Remove from the oven and set aside to cool.

3. Prepare the Key Lime Filling:
- In a large bowl, whisk together 1 tablespoon of lime zest, 1/2 cup of freshly squeezed lime juice, 14 ounces of sweetened condensed milk, 1/2 cup heavy cream, 4 egg yolks, 1/4 teaspoon vanilla extract, and 1/4 teaspoon salt until smooth and fully combined.
- Pour the filling into the cooled graham cracker crust, spreading it evenly with a spatula.

4. Bake the Pie:
- Return the pie to the oven and bake for 15 minutes, or until the filling is set but still slightly jiggly in the center.
- Allow the pie to cool to room temperature, then refrigerate for at least 2 hours, or until fully chilled and set.

5. Make the Whipped Cream Topping:
- In a medium bowl, whip 1 cup of heavy cream with 1/4 cup powdered sugar and 1/2 teaspoon vanilla extract using an electric mixer on medium-high speed until soft peaks form.

6. Assemble the Pie:
- Once the pie is chilled, spread the prepared whipped cream evenly over the top of the pie.
- Garnish with additional lime zest if desired.
