Korean-Inspired Oven-Roasted Short Ribs



Ingredients



- 4 lbs short ribs
- 1/2 cup flour
- 1 tablespoon kosher salt
- 1 teaspoon black pepper
- 2 tablespoons olive oil
- 1/4 cup rice wine vinegar
- 2 limes, juiced
- 1/4 cup gochujang (Korean chili paste)
- 1/4 cup soy sauce
- 1/4 cup brown sugar
- 1 tablespoon sesame oil
- 2 cups water
- 1 beef bouillon cube
- 3 green onions, sliced (plus extra for garnish)
- 4 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 2 chili peppers, thinly sliced (remove seeds for less heat)
- 1/2 cup fresh cilantro, chopped (plus extra for garnish)
- 2 tablespoons sesame seeds

Instructions



1. Prepare Short Ribs: Preheat your oven to 350°F. Pat the short ribs dry with paper towels. In a shallow dish, combine flour, kosher salt, and black pepper. Dredge the short ribs in the flour mixture, shaking off any excess.

2. Sear Short Ribs: In a large oven-safe pot or Dutch oven, heat olive oil over medium-high heat. Sear the short ribs on all sides until they are nicely browned. This should take about 3-4 minutes per side. Remove the ribs from the pot and set aside.

3. Deglaze and Prepare Sauce: Lower the heat to medium. Into the same pot, add rice wine vinegar, stirring to deglaze the pan and scrape up any brown bits. Add lime juice, gochujang, soy sauce, brown sugar, and sesame oil, stirring until well combined.

4. Create Braising Liquid: Dissolve the beef bouillon cube in 2 cups of warm water and add this liquid to the pot. Stir in the green onions, garlic, ginger, and chili peppers.

5. Braise Short Ribs: Return the short ribs to the pot, ensuring they are submerged in the liquid. Cover the pot with a tight-fitting lid and transfer it to the preheated oven.

6. Roast Short Ribs: Roast in the oven for approximately 2 hours, or until the short ribs are tender and the sauce has thickened.

7. Finish and Serve: Once done, remove the pot from the oven. Stir in the chopped cilantro. Let the ribs rest for a few minutes before serving. Garnish with additional green onions, cilantro, and sesame seeds.
