Lamb and Stout Shepherd's Pie with Cheesy Mashed Potatoes



Ingredients



- Main Component:
- 1 ½ pounds lamb shoulder, cut into 1-inch cubes
- 2 tablespoons olive oil

- Vegetables:
- 2 medium onions, diced
- 2 large carrots, peeled and diced
- 2 parsnips, peeled and diced

- Liquids and Flavorings:
- 12 oz stout beer
- 2 cups beef broth
- Salt and pepper to taste

- Mashed Potato Topping:
- 4 cups mashed potatoes (prepared)
- 1 cup shredded sharp cheddar cheese

Instructions



1. Preheat the Oven:
Preheat your oven to 375°F (190°C).

2. Brown the Lamb:
In a large oven-safe skillet or Dutch oven, heat 2 tablespoons of olive oil over medium-high heat. Add cubed lamb in batches, and sear until browned on all sides. Remove lamb from the skillet and set aside.

3. Cook the Vegetables:
In the same skillet with the leftover lamb drippings, reduce heat to medium and add the diced onions. Sauté for about 3 minutes until translucent. Add carrots and parsnips, and cook for an additional 5 minutes, stirring occasionally.

4. Deglaze and Simmer:
Pour 12 oz of stout beer into the skillet, scraping up any browned bits from the bottom. Add 2 cups of beef broth and bring the mixture to a simmer. Return the browned lamb to the skillet, season with salt and pepper to taste, and let it simmer uncovered for about 20 minutes until the sauce slightly thickens.

5. Assemble the Pie:
Remove the skillet from heat. Spread prepared mashed potatoes evenly over the lamb mixture. Sprinkle shredded sharp cheddar cheese on top of the mashed potatoes.

6. Bake:
Transfer the skillet to the preheated oven. Bake for 25 minutes or until the cheese is melted and bubbly, and the mashed potatoes develop a slight crisp on top.

7. Serve:
Remove from the oven and let it cool for a few minutes. Serve hot, spooning portions directly from the skillet onto plates.
