Lemon Almond Velvet Cake with Lemon Glaze



Ingredients



- For the Cake:
- 1 cup unsalted butter, softened
- 2 cups granulated sugar
- 4 large eggs
- 1 cup sour cream
- 1 teaspoon lemon extract
- 1 teaspoon almond extract
- 2 1/2 cups all-purpose flour
- 1 tablespoon baking powder

- Zest of 2 lemons

- For the Lemon Glaze:
- 1/2 cup fresh lemon juice (approximately 2 lemons)
- 1/2 cup water
- 1 cup powdered sugar, sifted
- 2 tablespoons milk

Instructions



1. Preheat and Prepare:
- Preheat your oven to 350°F.
- Grease and flour a 9x13 inch baking pan.

2. Cream Butter and Sugar:
- In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3 minutes.

3. Incorporate Wet Ingredients:
- Add eggs one at a time to the butter mixture, beating well after each addition.
- Blend in sour cream, lemon extract, and almond extract until smooth.

4. Combine Dry Ingredients:
- In another bowl, whisk together flour, baking powder, and salt.
- Gradually mix the dry ingredients into the wet mixture, stirring until just combined.
- Fold in the fresh lemon zest, ensuring even distribution throughout the batter.

5. Bake the Cake:
- Pour the batter into the prepared baking pan, smoothing the top with a spatula.
- Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center comes out clean.

6. Prepare the Lemon Glaze:

7. Glaze the Cake:
