Lemon-Basil Pearl Couscous with Arugula and Feta



Ingredients



- 1 cup pearl couscous
- 2 cups water
- 2 cups arugula, loosely packed
- 1 small cucumber, diced
- 4 oz feta cheese, crumbled
- 1 preserved lemon, finely chopped
- 2 tablespoons lemon juice
- 3 tablespoons olive oil
- 1 tablespoon honey
- 6-8 fresh basil leaves, chopped
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper

Instructions



1. Cook the Pearl Couscous:
- In a medium saucepan, bring 2 cups of water to a boil over medium-high heat.
- Add 1 cup of pearl couscous and 1/4 teaspoon of salt.
- Reduce heat to low, cover, and let simmer for about 10 minutes (PT10M), stirring occasionally until the couscous is tender and water is absorbed.
- Remove from heat and let it cool slightly.

2. Prepare the Dressing:
- In a small bowl, combine 2 tablespoons of lemon juice, 3 tablespoons of olive oil, and 1 tablespoon of honey.
- Whisk together until well emulsified.
- Season with a pinch of salt and black pepper. Set aside.

3. Assemble the Salad:
- In a large mixing bowl, combine cooked and cooled couscous, 2 cups of arugula, diced cucumber, crumbled feta cheese, and chopped preserved lemon.
- Drizzle the dressing over the salad.

4. Mix Well:
- Gently toss the ingredients together using salad tongs or a large spoon until all components are well coated with the dressing.

5. Garnish and Serve:
- Add the chopped basil leaves and sprinkle 1/4 teaspoon of black pepper.
- Transfer to a serving platter or individual bowls.
