Lemon Berry Chocolate Delight Cheesecake
Ingredients
- Crust:
- 1 cup oatmeal
- 4 tablespoons unsalted butter, melted
- 2 tablespoons sugar
- 1 tablespoon cocoa powder
- Filling:
- 16 ounces cream cheese, softened
- 1/2 cup sugar
- 2 tablespoons honey
- 2 large eggs
- 1/2 cup buttermilk
- 1 teaspoon vanilla extract
- Zest of 1 lemon
- 1/2 cup pureed pumpkin
- 1/4 cup fresh lemon juice
- Topping:
- 1/2 cup blueberries
- 1/2 cup strawberries, sliced
- 1/4 cup caramel sauce

Instructions
1. Preheat the Oven:
- Preheat your oven to 350°F (175°C).
2. Prepare the Crust:
- In a medium bowl, combine 1 cup of oatmeal, 4 tablespoons of melted butter, 2 tablespoons of sugar, and 1 tablespoon of cocoa powder.
- Mix until the ingredients are well combined and the mixture clumps together slightly.
- Press the mixture evenly into the bottom of a 9-inch springform pan.
- Place in the oven and bake for PT10M (10 minutes). Remove and set aside to cool.
3. Make the Filling:
- In a large bowl, beat the softened cream cheese with 1/2 cup of sugar using an electric mixer until smooth and creamy.
- Add 2 tablespoons of honey and beat again until incorporated.
- Mix in the eggs one at a time, beating well between each addition.
- Slowly add 1/2 cup of buttermilk, 1 teaspoon of vanilla extract, lemon zest, and 1/4 cup of lemon juice. Mix until fully combined and smooth.
- Stir in the 1/2 cup of pureed pumpkin gently until well mixed.
4. Bake the Cheesecake:
- Pour the cream cheese mixture over the cooled crust in the springform pan.
- Smooth the top with a spatula.
- Bake in the preheated oven for PT45M (45 minutes) or until the center is set and the edges are light golden brown.
5. Cool and Chill:
- Turn off the oven, crack the door open slightly, and let the cheesecake cool in the oven for 1 hour. This helps prevent cracking.
- Transfer to a refrigerator and chill for at least PT4H (4 hours) or overnight for best results.
6. Serve with Toppings:
- Before serving, top the cheesecake with 1/2 cup of blueberries and 1/2 cup of sliced strawberries.
- Drizzle 1/4 cup of caramel sauce over the top.
- Add chocolate shavings and extra lemon zest for an elegant touch.
