Lemon Butter Chicken Thighs with Capers and Mushrooms
Ingredients
- 4 chicken thighs, bone-in and skin-on
- 1/2 cup all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- 1 cup button mushrooms, sliced
- 1/4 cup fresh lemon juice (about 2 lemons)
- 1/4 cup chicken stock
- 3 tablespoons unsalted butter
- 2 tablespoons capers, drained
Instructions
1. Prepare the Chicken:
- Pat the chicken thighs dry with paper towels.
- In a shallow dish, mix together the flour, salt, and black pepper.
- Dredge each chicken thigh in the flour mixture, ensuring they are coated evenly. Shake off any excess flour.
2. Sauté the Chicken:
- In a large skillet, heat the olive oil over medium-high heat.
- Once the oil is hot, add the chicken thighs skin-side down.
- Sauté for about 5 minutes, or until the skin is golden brown and crispy.
- Flip the thighs and continue cooking for another 5 minutes. Remove chicken from the skillet and set aside.
3. Sauté the Mushrooms:
- In the same skillet, add the sliced button mushrooms.
- Sauté for 3 minutes until they become tender and lightly browned.
4. Prepare the Sauce:
- Reduce the heat to medium.
- Add the lemon juice and chicken stock to the skillet, scraping the bottom to deglaze.
- Stir in the butter and capers, cooking until the butter melts into a silky sauce.
5. Finish the Dish:
- Return the chicken thighs to the skillet, skin-side up.
- Spoon the sauce over the thighs, cover the skillet with a lid, and simmer gently for 10 minutes or until the chicken is cooked through to an internal temperature of 165°F.
6. Serve:
- Plate the chicken thighs and spoon the mushroom and caper sauce over the top.
- Serve immediately with your choice of sides.
