Lemon Garlic Pasta with Broccoli and Toasted Pine Nuts
Ingredients
- 12 oz pasta (your choice of variety)
- 1 head of broccoli, cut into florets
- 3 tablespoons olive oil
- 2 tablespoons butter
- 4 cloves garlic, minced
- 1 lemon, zested and juiced
- 1/4 cup pine nuts
- 1 teaspoon salt, plus more to taste
- 1/2 cup grated Parmesan cheese, plus more for serving
Instructions
1. Cook the Pasta
Bring a large pot of salted water to a boil over the stove. Add the pasta and cook according to package instructions until al dente, approximately PT10M (10 minutes). Reserve 1 cup of pasta water, then drain the pasta and set aside.
2. Steam the Broccoli
While the pasta is cooking, heat a large saucepan over medium heat with a steamer insert. Add the broccoli florets and a pinch of salt. Cover and steam for PT5M (5 minutes) until tender but still vibrant green. Remove from heat.
3. Toast the Pine Nuts
In a dry skillet over medium heat, add the pine nuts and toast for about PT3M (3 minutes), stirring frequently, until they’re golden-brown and fragrant. Be careful not to burn them. Transfer to a small bowl and set aside.
4. Prepare the Sauce
In the same skillet, add olive oil and butter and heat over medium heat until the butter melts. Add minced garlic and sauté for PT2M (2 minutes) until fragrant.
5. Combine Pasta and Broccoli
Add the steamed broccoli to the skillet with the garlic butter. Gently mix, then add the cooked pasta.
6. Flavor the Dish
Pour the lemon juice and zest over the pasta and broccoli. Toss everything together, adding reserved pasta water a little at a time if the mixture seems dry. Season with 1 teaspoon of salt, adjusting to taste.
7. Finish and Serve
Stir in the grated Parmesan cheese and toasted pine nuts. Serve hot, garnished with additional Parmesan if desired.
