Lemon Herb Roasted Chicken with Garlic and White Wine
Ingredients
- 4 boneless, skinless chicken breasts
- 4 cloves garlic, minced
- 4 tablespoons olive oil
- 3 tablespoons lemon juice
- 1 tablespoon lemon zest
- 1 teaspoon dried oregano
- 2 teaspoons fresh thyme leaves
- 1 teaspoon salt
- 1/2 cup white wine
- 1/2 teaspoon freshly ground black pepper
Instructions
1. Prepare the Marinade
In a small mixing bowl, blend together the minced garlic, olive oil, lemon juice, lemon zest, dried oregano, fresh thyme leaves, salt, and black pepper until well combined.
2. Marinate the Chicken
Place the chicken breasts in a large zip-top bag or a shallow dish. Pour the marinade over the chicken, ensuring each piece is fully coated. Seal the bag or cover the dish. Refrigerate for at least PT1H (1 hour) to allow the flavors to infuse.
3. Preheat the Oven
Approximately 15 minutes before cooking, preheat your oven to 375°F (190°C).
4. Prepare for Roasting
Remove the marinated chicken from the refrigerator and let it sit at room temperature for about 10 minutes. Transfer the chicken breasts to a baking dish, arranging them in a single layer. Pour the white wine around the chicken in the dish.
5. Roast the Chicken
Place the baking dish in the preheated oven and roast for PT30M (30 minutes), or until the chicken is fully cooked and has reached an internal temperature of 165°F (74°C).
6. Serve and Enjoy
Once cooked, remove the chicken from the oven and let it rest for 5 minutes before serving. Spoon the pan juices over the chicken for added flavor and moisture.
