Lemon Herb Roasted Potatoes with Feta & Cream Cheese Drizzle
Ingredients
- 4 large russet potatoes
- 2 teaspoons sea salt
- 1 tablespoon lemon zest (from about 1 lemon)
- 1 tablespoon mixed dried herbs (e.g., thyme, rosemary, oregano)
- 3 tablespoons olive oil
- 1/2 cup crumbled feta cheese
- 1/4 cup cream cheese, softened
- 2 tablespoons fresh lemon juice
- Additional sea salt, to taste
Instructions
1. Preheat the Oven
Preheat your oven to 400°F.
2. Prepare the Potatoes
Wash and scrub the russet potatoes thoroughly. Pat them dry with a clean towel. Cut each potato into quarters, ensuring uniform size for even cooking.
3. Season the Potatoes
Place the potato quarters in a large mixing bowl. Add 2 teaspoons of sea salt, lemon zest, mixed dried herbs, and 2 tablespoons of olive oil. Toss to coat the potatoes evenly with the seasoning mixture.
4. Roast the Potatoes
Arrange the seasoned potatoes on a baking sheet in a single layer. Roast in the preheated oven for 35-40 minutes (PT35M-PT40M), or until they are golden brown and crispy on the outside and tender on the inside. Flip the potatoes halfway through for even browning.
5. Prepare the Cheese Drizzle
While the potatoes are roasting, prepare the feta and cream cheese drizzle. In a small bowl, combine the crumbled feta cheese, softened cream cheese, and fresh lemon juice. Mix until combined and slightly creamy. Feel free to add a little more lemon juice if a thinner consistency is desired.
6. Finish the Dish
Remove the roasted potatoes from the oven once done. While still warm, drizzle the feta and cream cheese mixture generously over the potatoes. For an extra burst of flavor, sprinkle a pinch of sea salt on top if desired.
