Lemon Honey Salted Quinoa Salad - No Cooking Required!
Ingredients
- 2 cups pre-cooked quinoa
- 1 small lemon, juiced
- 3 tablespoons honey
- 1 teaspoon salt
- 2 tablespoons olive oil
- 1 cup cherry tomatoes, halved
- 1 avocado, diced
- 1/4 cup fresh parsley, chopped
- 1/4 cup feta cheese, crumbled
- 1/4 cup almonds, sliced
Instructions
1. Prepare the Dressing:
- In a small bowl, combine the juice of 1 lemon, 3 tablespoons honey, and 1 teaspoon salt.
- Slowly whisk in 2 tablespoons of olive oil until the mixture is well combined and slightly emulsified.
2. Assemble the Salad:
- In a large mixing bowl, add 2 cups of pre-cooked quinoa.
- Add 1 cup of halved cherry tomatoes, 1 diced avocado, and 1/4 cup chopped fresh parsley.
- Pour the lemon honey dressing over the quinoa and mix gently to ensure all ingredients are well coated.
3. Finish and Serve:
- Gently fold in 1/4 cup of crumbled feta cheese and 1/4 cup of sliced almonds.
- Taste and adjust salt if needed.
- Serve immediately, garnished with additional parsley if desired.
