Lemon-Infused Breakfast Oatmeal Cookies with Dark Chocolate Chips



Ingredients


- 1 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup rolled oats
- 1/2 cup unsweetened shredded coconut
- 1/2 cup finely crushed shredded wheat
- 1/2 cup whole wheat flour
- 1/4 teaspoon ground nutmeg
- 1/2 cup packed brown sugar
- 1/4 cup superfine sugar
- Zest of 1 lemon
- 1 teaspoon pure vanilla extract
- 1/2 cup (1 stick) unsalted butter, softened
- 2 large eggs
- 3/4 cup dark chocolate chips

Instructions


1. Prep the Oven and Baking Sheet:
Preheat your oven to 350°F (177°C). Line a baking sheet with parchment paper or a silicone baking mat.

2. Combine Dry Ingredients:
In a medium bowl, whisk together the all-purpose flour, baking soda, salt, rolled oats, shredded coconut, crushed shredded wheat, whole wheat flour, and nutmeg. Set aside.

3. Cream the Wet Ingredients:
In a large bowl, using an electric mixer on medium speed, cream the softened butter, brown sugar, and superfine sugar until light and fluffy, about 3-4 minutes.

4. Incorporate Flavor Elements:
Mix in the lemon zest and vanilla extract until combined. Add the eggs one at a time, beating well after each addition.

5. Mix Everything Together:
Gradually add the dry ingredient mixture to the wet ingredients, mixing on low speed until just combined.

6. Fold in the Chocolate Chips:
Using a spatula, gently fold the dark chocolate chips into the dough until evenly distributed.

7. Shape the Cookies:
Scoop tablespoon-sized balls of dough and place them on the prepared baking sheet, spacing them about 2 inches apart to allow for spreading.

8. Bake:
Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden and the centers are set. Rotate the baking sheet halfway through baking to ensure even browning.

9. Cool and Serve:
Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely. Enjoy them warm or at room temperature.
