Lemon-Lime Cream Tart with Saltine Crust
Ingredients
- For the Crust:
- 1 1/2 cups Saltine crackers (about 37 crackers), finely crushed
- 6 tbsp Unsalted butter, melted
- 2 tbsp Granulated sugar
- 1/4 tsp Salt
- For the Filling:
- 1 can (14 oz) Sweetened condensed milk
- 4 large Egg yolks
- 1/3 cup Fresh lemon juice (about 2-3 lemons)
- 1/3 cup Fresh lime juice (about 3-4 limes)
- Zest of 1 lemon
- Zest of 1 lime
- 1/4 tsp Salt
- For the Topping:
- 1 cup Heavy whipping cream
- 2 tbsp Powdered sugar
- 1/2 tsp Vanilla extract
- Flaky salt, for garnish
Instructions
1. Preheat Oven:
- Preheat your oven to 350°F (175°C).
2. Prepare the Crust:
- In a medium bowl, combine the crushed Saltine crackers, 6 tablespoons of melted unsalted butter, 2 tablespoons of granulated sugar, and 1/4 teaspoon of salt.
- Mix until the crumbs are evenly coated and resemble wet sand.
- Press the salted cracker mixture into the bottom and up the sides of a 9-inch tart pan, ensuring an even layer.
- Bake for 10 minutes until the crust is lightly golden.
- Let it cool while you prepare the filling.
3. Make the Filling:
- In a large bowl, whisk together the sweetened condensed milk, 4 egg yolks, 1/3 cup of fresh lemon juice, 1/3 cup of fresh lime juice, lemon zest, lime zest, and 1/4 teaspoon of salt until smooth and well combined.
- Pour the filling evenly into the cooled crust.
4. Bake the Tart:
- Return the tart to the oven and bake for approximately 15 minutes until the center is set but still slightly jiggly.
- Remove from the oven and allow the tart to cool at room temperature for about 30 minutes.
- Refrigerate for at least 2 hours, or until fully chilled and firm.
5. Prepare the Whipped Topping:
- In a large mixing bowl, beat 1 cup of heavy whipping cream with an electric mixer on medium speed until soft peaks form.
- Add 2 tablespoons of powdered sugar and 1/2 teaspoon of vanilla extract, then continue to beat until stiff peaks form.
- Spread the whipped cream over the chilled tart just before serving.
6. Garnish:
- Lightly sprinkle flaky salt over the top for a burst of flavor and visual appeal.
