Lemon Mascarpone Tiramisu with White Chocolate Shavings



Ingredients



- 1 cup sugar
- 2 tablespoons lemon zest
- 1/2 cup fresh lemon juice
- 4 large egg yolks
- 1/2 cup unsalted butter, cut into pieces
- 1/4 cup water
- 8 ounces mascarpone cheese
- 1 cup confectioners’ sugar
- 1 teaspoon vanilla extract
- 1 cup heavy cream
- 24 ladyfingers
- Lemon slices, for garnish
- Fresh mint leaves, for garnish
- 1/2 cup white chocolate shavings

Instructions



1. Prep the Lemon Curd:
- In a medium saucepan over medium heat, combine 1 cup sugar, 2 tablespoons lemon zest, 1/2 cup lemon juice, 4 egg yolks, 1/4 cup water, and 1/2 cup unsalted butter.
- Stir constantly until the mixture thickens, about 8 minutes. Do not let it boil.
- Once thickened, remove from heat and pour into a bowl. Cover with plastic wrap, pressing it directly onto the surface of the curd to prevent a skin from forming. Let it cool to room temperature.

2. Prepare the Mascarpone Mixture:
- In a large mixing bowl, beat 8 ounces mascarpone cheese with 1 cup confectioners’ sugar and 1 teaspoon vanilla extract until smooth.
- In a separate bowl, whip 1 cup heavy cream until it forms soft peaks.
- Gently fold the whipped cream into the mascarpone mixture until well incorporated.

3. Assemble the Tiramisu:
- Quickly dip each of the 24 ladyfingers in the cooled lemon curd, ensuring they are well-coated but not soggy.
- Line the bottom of a 9x9-inch dish with half of the ladyfingers.
- Spread half of the mascarpone mixture over the ladyfingers, smoothing it out with a spatula.
- Add another layer of lemon curd-coated ladyfingers on top of the mascarpone mixture.
- Spread the remaining mascarpone mixture over the second layer of ladyfingers.

4. Finishing Touches:
- Refrigerate the tiramisu for at least 4 hours, allowing the flavors to meld together and the texture to set.
- Before serving, sprinkle 1/2 cup white chocolate shavings over the top.
- Garnish with lemon slices and fresh mint leaves for a refreshing finish.
