Lemon Paprika Roasted Chicken with Garlic



Ingredients



- 4 chicken thighs, bone-in and skin-on
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 teaspoons paprika
- 1 lemon, sliced

Instructions



1. Preheat Oven:
Preheat your oven to 400°F (200°C).

2. Prepare the Chicken:
Pat the chicken thighs dry with paper towels. This helps the skin to crisp up during cooking.

3. Create Marinade:
In a small bowl, combine 2 tablespoons of olive oil, minced garlic, salt, black pepper, and paprika. Mix well to form a smooth marinade.

4. Marinate the Chicken:
Brush the marinade generously over the chicken thighs, making sure to coat the skin. For enhanced flavor, gently lift the skin and rub some marinade directly onto the meat underneath as well.

Drizzle the remaining tablespoon of olive oil over the chicken thighs to enhance browning.

Place the baking dish in the preheated oven and roast the chicken for about 45 minutes, or until the internal temperature of the chicken reaches 165°F (74°C). The skin should be golden and crispy.

8. Resting:
Remove the chicken from the oven and let it rest for 5 minutes before serving. This allows the juices to redistribute, ensuring moist and tender meat.
